when cooking really meaty fishes with the kind of flavor salmon has, which is like, I guess hearty? you should all try adding a splash of soy sauce to the pan and then about 4 tablespoons of coffee at the end and letting it cook on high heat there all while keeping the sauce at the base moving to help it take form. after about 3-4 min. you are gonna have like a hearty rich fishy sauce that adds a lot of body to the taste and if done in a hot enough pan, will also sear more of that sauce flavor into the face down side of the salmon, thus enhancing the way the salmon holds form and prevent it from drying out and, if you, like me, tend to pair this salmon with the Coscto Stir Fry bag in the frozen section, you can defrost about 2-3 portions of the vegetable blend, drain and then slam into the hot pan after you've pulled out the salmon to rest, let it sit for 2-3 minutes or if it smells like its starting to burn, then add like 2 tablespoons of coffee and maybe some more soy sauce and like something you have on hand like garlic, or the lemon pepper we all probably have in the back of our spice storage area and fold all that stuff into the stir frying vegetables to keep the sauce moving and then basically a within ten minutes, you end up getting a pseudo low effort stir fry that uses minimal ingredients and dirtys three-four dishes for prep. I kno woks make better stir fry but most woks sear stuff like salmon fillets in ways that aren't gonna help the body of the salmon or its texture, you can add more coffee to the pan post salmon being pulled and then add like, some kind of sauce that has binding agents in it like corn starch, or like, honey, or like, even xantham gum (often in most store bought sauces) and you can usually transfer that to a wok to stir fry those vegetables in that pan sauce, (this won't hold on to the pan sauce as well, or incorporate it into the stir fry as well unless you modify it more) (edit: this might work w/ a pesto but thats an interesting fusion I've never tried, I just saw the salmon and thought of those frozen bags of fillets and started typing)
