Being friendly and chatty to the locals is something the upper middle class hipsters that move to places in London loke Islington, Shoreditch, Hackney and Camden could do to make the people that have grown up in these areas, that were once pretty deprived areas in many parts 20 to 30 years ago before massive gentrification. They should take a leaf out of Dannys book!

Yes but they don’t just go and buy the ingredients from the supermarket and charge you cost price. They need to make a profit - which is usually about 70% gross for a food business. So if they pay 30p for ingredients, they need to charge a pound. This covers rent (or for a food stall - the extortionate license), wages, fuel, electricity and gas, packaging, cutlery , marketing. Running a food business is very very expensive. People in the uk do not seem to understand basic business

I think they opened about 10am and closed at midnight. My ex partner used to be a market trader and big corporations won the was, in about 2008, when they wanted to do that huge multistory thing. They wanted to put it in an area where it was all small traders. The one night they all burnt down and the planning permission went straight through. None of the traders had insurance and went under.
