Here are the recipes I tried:
#1 Choc chip cookies
-1 cup (125g) flour
-1/3 cup + 1 TBSP (75g) sugar
-1/2 cup (50g) oats
-1/2 TSP baking powder
-100g vegan butter or margarine
-2 TBSP plant milk or vegan cream
-80g choc chips
-optionally: a few drops bitter almond flavor
COMBINE all ingredients until it’s a dough/SHAPE into 12 cookies/BAKE them at 190Celsius(375 Fahrenheit) for 12-15mins.
#2 Mushroom tofu Stir-fry
-1 TBSP olive oil
-300g slices mushrooms
-1 bell pepper
-1 spring onion
-1 TBSP grated ginger
-1 clove garlic
-225g smoked tofu
-3 TBSp soy sauce
-a pinch of pigment fort (chili flakes?)
FRY mushrooms and pepper in the oil for a few mins, then add spring onion ginger and garlic/REMOVE from the pan and fry the tofu golden-brown/ADD the veggies back to the pan and season with soy sauce and pigment fort
#3 Fatteh
-2 pita breads
-1 can chickpeas
-a handful pine nuts or almonds
-1 1/2 cups (300g) vegan yogurt
-1/2 lemon
-1 heaped TBSP tahini
-2 cloves garlic
-salt and cumin to taste
CUT the pita bread in squares and drizzle with olive oil/BAKE at 200Celsius (400Fahrenheit) for 5-10mins/COMBINE yogurt, tahini, lemon juice, the spices and garlic/TOAST the nuts til slightly browned/ASSEMBLE everything
