I have only done chicken on my Egg and always at 250 degrees. A whole chicken will take 2 hours and parts about 1 hour. I guess I like more smoke flavor. Why 350?

Great question. Poultry doesn’t need low and slow to break down like pork butt or brisket. The higher temp will also help get the skin crisp. Just look at temps they suggest for chicken in the oven. 350 and up for the most part. You’ll still get smoke flavor.

HI Julia, thanks for a great question. I personally do not. I find that poultry really pulls in that smoke flavor and it can easily be overpowering. I find that the amount of smoke that I get just from our lump charcoal provides just the right kiss of smoke for my turkey.
