Khoresht-e-Kadoo is a perfect dish with the freshest ingredients. Cut into the softest zucchini and savour the tart and savory flavours as it melts in your mouth. Serve it with rice for the most perfect meal. One of my absolute favourites:)

Ingredients
STEW:
✰ 6 zucchinis, washed and cut in half
✰ 2.2lbs skinless, boneless chicken (small pieces) (or 6 chicken thighs with bone)
✰ 3 cups boiling water
✰ 1 onion
✰ 4 garlic cloves, diced
✰ 1 tsp turmeric
✰ 1 tsp salt
✰ 4 tbsp tomato paste
✰ 1 tsp pepper
✰ 2 tbsp vegetable oil for grilling zucchini.
✰ 3 whole tomatoes
✰ 4 tbsp lemon juice OR ½ cup sour grapes
✰ 2 tbsp saffron water
CHICKEN MARINADE:
✰ 1 tsp paprika
✰ 1 tsp salt
✰ ½ tsp pepper
✰ 2 tbsp olive oil
✰ 3 tbsp lime juice
Directions:
1. Dice onion and garlic.
2. Marinade the chicken. In a pan on medium-high heat, heat 2 tbsp vegetable oil. Grill the chicken until all sides are browned and cooked.
3. Rinse and peel the zucchini. Cut in half vertically. In a pan, add 4 tbsp vegetable oil and grill the zucchini (~10 minutes each side)
4. In the same pan, grill the tomatoes (~5 minutes each side)
5. In a large pot, add some olive oil and the onions and garlic. Caramelize for 8 minutes. Add the tomato paste and cook for 5 minutes. The tomato paste should release a nice smell.
6. Add the chicken and stir for 10 minutes. Add boiling water, spices (pepper, salt, turmeric), saffron water, and close the lid. Cook on low heat for 30 minutes (cook for 45 minutes if the chicken has bone).
7. Add the sour ingredient of your choice (lime/lemon juice, sour grapes).
8. Place the zucchinis and tomatoes on top of the stew. Cover and cook on low heat for 45 minutes.
Tips:
✰ I decided to use skinless and boneless chicken that I cut into small pieces. You can use chicken thigh with bone, chicken breast, any way you like it!
✰ This stew can be made with lamb as well, let me know if you would like another video on how to cook that!
