Hi! I had so much fun making this! This year has been weirdly really tough for me, but I'm finding therapy in small moments like these. Hard times don't last forever! I'm staying optimistic that I'll look back on this video later in the year and laugh at how great everything worked out in the end.

Honey Dijon Maple Salad Recipe:
2 tbsp of maple syrup
2 tbsp of apple cider vinegar
1 tbsp of Dijon mustard
1/3 cup extra-virgin olive oil
salt & black pepper to taste
Thats it! So simple and delicious. Blend it all up in your blender and sprinkle over your favorite greens! I've been eating this recipe like 4x a week with a bunch of kale and different seafood or plant-based protein. Sometimes I double the portions if I'm making a HUGE salad.
