Cohesion isn't even the point. It lacks basic kitchen hygiene. Like washing the sand and flies out of the vegetables. It doesn't fall short, it is gastronomically and medically inedible.

Was always a little bugged by this scene. It’s certainly cathartic to have the evil loser mocked by his idol, but someone that annoying and nerdy about fine dining would likely just imitate something that he knows works. still soulless, but less comically incompetent

"Something he knows works" would be properly chopping and cooking things. He didn't do that. And it's his sheer pretention that makes his dish worse. He didn't only fail at a technical level, but he was also totally basic about it.

His failure was cartoonish, which I guess fits with the rest of the movie, I just would have preferred some restraint.

Skatole isn't due to grass. It's inherent in sheep and goats. That's what makes them taste... strong. Grain can get rid of a lot of gamey taste, but not that.
