INGREDIENTS:
FOR CHHOLE MASALA:
Coriander seeds (साबुत धनिया) - 3 tbsp
Fennel seeds (सौंफ) - 1.5 tbsp
Cumin seeds (जीरा) - 1.5 tbsp
Black pepper seeds (काली मिर्च) - 10-12
Green cardamom (हरी इलायची) - 3-4
Star anise (चक्र फूल) - 2-3
Mace (जावित्री) - 1
Clove (लौंग) - 4-5
Cinnamon (दाल चीनी) - 1stick
Carom seeds (अजवाइन) - 1/4 tsp
Dry red chili (साबुत लाल मिर्च) - 4
Dried fenugreek leaves (कसूरी मेथी) - 1 tbsp
Roasted chickpeas (भुने चने) - 3 tbsp
Pomegranate seeds powder (अनारदाना) - 2 tbsp
Asafoetida (हींग) - 1/2 tsp
Dried mint leaves (पुदीना पत्ती) - some
Black Salt (काला नमक) - 2 tsp
Kashmiri Red Chili powder (कश्मीरी लाल मिर्च पाउडर) - 2 tsp
Ginger powder (अदरक पाउडर) - 2 tsp
Mango powder (अमचूर पाउडर) - 2 tbsp
FOR CHHOLE:
Ghee/Oil (घी /तेल) - 2 tsp
Cumin seeds (जीरा) - some
Kashmiri red chili powder (कश्मीरी लाल मिर्च पाउडर) - 1/2 tsp
Chhole Masala (छोले मसाला) - 3 tsp
Chickpeas (छोले) - 1 bowl
Water (पानी) - as required
Tamarind Chutney (इमली चटनी) - 1 tsp
FOR SERVING:
Onion (प्याज)
Tomato (टमाटर)
Green chili (हरी मिर्च)
Ginger (अदरक)
Lemon (नींबू)
RECIPE:
Soak some Chickpeas overnight and boil them in the pressure cooker by adding salt in it. Give it 2 whistles then cook it on a slow flame for 5 mins.
For Chana Masala/Chhole Premix, keep a pan on low to medium flame, put some Coriander Seeds, thick Fennel Seeds and Cumin Seeds in it and roast them. Then put some Black Pepper, Green Cardamom, Star Anise, Mace, Cloves, Cinnamon Stick, Carom Seeds, dried Whole Red Chilies, dried Fenugreek Leaves, and Roasted Grams in it. Roast them all. Then put some dried Pomegranate Seeds, Asafoetida, and dried Mint Leaves and mix them all. Turn off the flame and keep them for cooling down.
Take a mixer jar, put the roasted spices in it, and put some Black Salt, Kashmiri Red Chili Powder, Ginger Powder, and Mango Powder in it. Grind them all and the Chana Masala/Chhole Premix will get ready.
Take another pan, put some Ghee in it. Then put some Cumin Seeds, Kashmiri Red Chili Powder, and some Chana Masala Premix in it. Roast the masala by adding some water in it and then put the boiled Chickpeas in it and cook it on slow flame. Then put some Jaggery and Tamarind Chutney in it and turn off the flame.
Garnish it with some Onion Rings, Tomato Slices, and some Green Chilies, and the very tasty restaurant-style Chana Masala will get ready so instantly.
