Ingredients
4oz (125g) cream cheese
3 egg yolks
3 egg whites
⅓ cup (70g) sugar
2 tbsp (30g) butter
¼ cup (50ml) milk
¼ cup (60g) cake flour
1 tbsp (15g) purple sweet potato powder or ube extract
1 tsp (5g) cornstarch
⅛ tsp (1g) salt
Directions
Over a double boiler, melt cream cheese, butter, and milk on medium-low heat. When everything finishes melting remove from heat and set aside to cool then mix in the egg yolks one by one.
Beat egg whites and sugar to stiff peaks adding sugar in tablespoon by tablespoon.
Sieve cake flour, cornstarch, purple sweet potato powder (if you’re using ube extract add it at the end), and salt into the cream cheese mixture. After it is combined, fold in your egg whites by half.
Pour the cheesecake batter into a prepared greased cake pan. Bake the cheesecake in a warm water bath. If using a light color cake pan bake at 325F (165C) for 1 hour and 10 minutes, but if using a dark color cake pan bake at 315F (160C) for 1 hour and 10 minutes.
