Guanciale is just pork cheek, you can find it in any country at a quality butcher shop. Pork is very common in East Asia. I cured my own last year it’s pretty easy and fun and sooooo good

Apart from the recomendation of using guanchale instead of bacon, use one egg and one egg yolk next time, and make a small slurry of flour and water and add to it if you don't want to use real spaguetti, as far as I know It will be a half-assed substitute for pasta water, which is key to create a good carbonara sauce.

@@MrStone125 Frankly it was difficult to find outside of Rome or some big cities where you could find more specialty meat or cold cuts. I haven't seen guanciale sold in my town until a few years ago. My gran and my great-aunt (who were both from near Rome) made do with some pancetta. Heck this looks pretty decent, all things considered.

As an Italian, I correct you on some steps. First of all, only the yellow parts of the eggs (at least 2-3) should be placed in the bowl I also recommend replacing the bacon with guanciale, instead of using parmesan use pecorino (ALSO YOU CAN USE ONE WHOLE EGG AND THE OTHER 2 ONLY THE YOLKS!!)
