Vegan Ukadiche Modak Recipe Ingredients:
For the Outer Covering:
1 cup rice flour
1.5 cups water
1/2 tsp ghee (clarified butter)
A pinch of salt
For the Stuffing:
1.5 cups fresh grated coconut
1/2 cup jaggery (you can adjust the quantity based on your sweetness preference)
1/2 tsp cardamom powder
Vegan Ukadiche Modak Recipe Instructions:
1. Preparing the Outer Covering (Ukad):
In a saucepan, bring 1.5 cups of water to a boil. Add a pinch of salt and 1/2 tsp of ghee to the boiling water.
Once the water is boiling, reduce the heat to low, and gradually add 1 cup of rice flour while continuously stirring with a wooden spoon or spatula.
Keep stirring the mixture until it forms a smooth dough-like consistency. Make sure there are no lumps.
Remove the saucepan from heat and let the dough cool down slightly. You should be able to handle it without burning your hands.
Knead the dough well to make it smooth and pliable. If the dough is too dry, you can sprinkle a little warm water and knead again.
Cover the dough with a damp cloth to prevent it from drying out while you prepare the stuffing.
2. Preparing the Stuffing:
In a separate pan, add the grated coconut and jaggery.
Heat the mixture on low to medium heat, stirring continuously until the jaggery melts and combines with the coconut. This will take about 5-7 minutes.
Once the mixture thickens slightly and comes together, add the cardamom powder and mix well.
Remove the stuffing from heat and let it cool down to room temperature.
3. Shaping the Modaks:
Take a small portion of the prepared rice flour dough and roll it into a smooth ball. Make sure the dough ball has no cracks.
Flatten the dough ball in your palm to create a small disc.
Place a teaspoonful of the prepared coconut-jaggery filling in the center of the disc.
Gently bring the edges of the disc together to form a modak shape. You can pinch the edges to make pleats if you like.
Repeat the process with the remaining dough and stuffing.
4. Steaming the Modaks:
Grease a steamer plate or idli plates with a little ghee to prevent sticking.
Place the modaks on the greased plate, leaving some space between each one to prevent sticking.
Steam the modaks in a steamer for about 15-20 minutes on medium heat until they become firm and cooked.
Once done, let them cool for a few minutes before removing them from the steamer.
