I think I might be a dweeb…but I absolutely love making broth. I do it every week in the winter. I make a yummy soup and what’s left over I use in rice dishes for the week. I love it’s so versatile and freezes so easily ❤

I’ve learnt to use whole chicken to make stock. Sometimes I add an extra back or two, plus feet & a gizzard. It’s how my grandmother did it.

Thank you! Years ago, I lived about a mile from a wonderful Chinese restaurant and would go there atleast once a week; all of the soups were fantastc! Then, I moved away and could not go there, again, until a few months ago. Sadly, the origanal owner had sold the restaurant, and the new owners hired a non-Chinese cook (as opposed to the Chinese chef who had worked thefe before). My first spoonful of soup let me know there had been changes; the entre, eggplant rubber, er, I mean eggplant chicken, simply cofirmed it.😥 Thank you for showing me the correct way to prepare broths.

The chicken meat has nothing keeping it together so it kinda crumbles into a mush but you can still try. I haven’t tried it myself so please report back and if it works I’ll give it a shot!

Another issue with that is the tiny bones might be crushed (especially after pressure cooking/long boil) when shredding leading to a gritty texture leftover in your shredded chicken/mush.

Did I miss the timing mentioned ? I know the aromatics go in the first broth for 45 min - 1 h, but how long does the chicken + bones simmer before that happens?

To maximize the use of the chicken, what if we use the meat Scraps and let them soak in some of the chicken fat over might or if we drown it in some kind of marinate or buffalo sauce thing where the dominant taste cones from something else, because I would like to recreate it and I know it is already worth it due to the stock but throwing all that meat away… so any solutions to that ?

Am i the only one living where a whole chicken is NOT cheaper than parts? Whole chickens are almost always 3 to 5 dollars a pound here and you can get thighs/drums for 99 cents a pound constantly. I keep hearing about the whole chicken savings but it's not in the room with me.

I've not tried this yet, so I can't say for sure. I assume the roasted concentrate flavor would overpower a lot of the herbal/spice nuance, but you'd ultimately have a very rich, very flavorful broth.
