I stopped calling excess food "leftovers." Instead, they get honored by naming them PLANNED-OVERS. We need 5 lunches each week times 2 in our household. I always make big meals and we immediately put portions in our lunch containers. Any other volume left goes into a container for planned-over dinners. My husband and I may not always eat the same food for dinner when we clean out the refrigerator. I only plan out dinners for each week, usually 2 weeks at a time. I never plan on cooking more than 3 times a week. My plan dates back to 2021. You can see that same meal rotation throughout. Oh, yes, I finally understand about the Instant Pot as a set-it-and-forget-it phenomenon. I converted several favorites for the IP and found new IP favorites too.

Leftovers are the best! I let myself get too hungry and then I want to eat RIGHT THIS MINUTE. Having leftovers ready to just heat up and eat is necessary or I'll definitely pick a less healthy option.

I made your oat clusters from a video 5 years ago. Wow, so good. Then I made Happy Herbivore dark chocolate truffles. Only four ingredients, white beans, peanut butter, maple syrup and cacao powder. The were so so good. I made a really quick potato corn chowder with canned potatoes and corn, your veggie blend and broth. It turned out great. As soon as I go to through my Better Than Bouillon I will give yours a try.

Got your veggie broth a few days ago and I’m loving it! I’ve been feeling under the weather and all I want is a cup of that broth a few times a day. I add coconut aminos for a little salt and also a boiled potato or some rice. It’s so comforting and tastes so much like chicken broth. This is a definite staple.

In the UK more and more supermarkets do frozen ingredients, crushed/chopped garlic, ginger, onions, mushrooms and other individual (rather than mix) veggies, chili, herbs, they're less expensive and real game changers.

Thankyou 🙏🏻🙏🏻last week I almost got off track! Im trying too hard to get my husband on biard with healthy eating but he’s quite picky ( long story) . I got so stressed from planning and all the things ( he doesn’t want to eat the same thing twice , even dal and soup is too much alike). It has to be more fancy for him also taste-wise ( he’s 100% sad diet-plus ). After one week i got too stressed and switched gears. I feel seen by this video🎉

Thanks!! Good tips & truths. I am going to follow the tip to have a FEW favorite recipes available to use, close in the kitchen. I have a couple of big binders of saved recipes in plastic sleeves in the bookshelf. And some saved on my phone. Now I am going to take the 5 or 10 I know I like and have used frequently and keep them in a small folder in the kitchen. ❤️🥦

Great tips. Been eating this ways for over 6 years now and mix and match is what I do. Make a bean dish, a starch and cook veggies or make a salad . And repeat lol. Change spices up, veggies or starches and beans ….. ❤❤

Lol, my family gets cranky when I serve the same meal too many days. The most I can do is dinner and then pack lunches with whatever I made the night before. The next days dinner needs to be a new thing or the house rumbles are loud. lol! I have found that freezing in souper cubes when I cook is a way to make larger batches, but rotate the food each day. When I cook I make a triple batch, one for now, two to freeze in souper cubes (two one gallon freezer bags). When I don't have time or don't feel like cooking then I make a starch and reheat in the instant pot or microwave one of the gallon freezer bags which is enough for my family of four who eat a lot of food! That way I can cook when I want and not just mandatory.
