I first tasted the Changsha black stinky tofu in my 2023 China travel. I agree with your assessment on its taste and texture. It had a unique briny taste on top of the spicy hot flavor, and light and soft on the inside.

Chinese sweets and puddings need to be promoted more!! although i think tang huo lu is sort of maybe trending?? Chinese sweets are virtually unknown and underrated!!! healthy and fresh and naturally sweet!!! not really super processed stuff... all made in front of you

You can get it all year round, but tanghulu is definitely more of a winter treat (especially the classic hawthorn). I'm a savoury girl, but you're right that there's lots of fun Chinese sweets to discover!

I'd start with the white one, it's a bit more mild. It's definitely an acquired taste, but I'm a huge fan as you can see 😂

1:19 so much cross contamination with meat....the oil has deep fried meat, that cooking surface has cooked meat, etc. If you have a vegan stomach that's sensitive to meat proteins, this will probably make you sick after eating it. I know for a fact that my vegan wife will not be able to handle this level of cross contamination.

Some vegans are more sensitive than others when it comes to cross-contamination, but I feel everyone is free to make their own choice. There's lots of other dishes I recommend on the channel which don't run the same risk, but unless you only frequent pure vegan restaurants it's hard to know what's really happening in the kitchen behind the scenes.

I am still on beginner level of learning Mandarin, but the interaction at 3:02 was really strange, where he meant "shi" but he said "si". As a Westerner learning Mandarin, it's really hard to be able to distinguish some of the Chinese pinyin letters, but the difference between shi and si is quite obvious, even to us i would say. But then i see native speakers often pronounce words wayyy off like in this case, i start to think the correct pronunciation doesn't matter that much at all, as even native speakers seem to identify meaning more over context than by the actual sound. Is it really like that?

Hahaha, I sometimes feel the exact same way 😂 One thing you might notice is that 10 (shí) is second tone, and 4 (sì) is fourth tone, so that's how I knew he meant ten. But you're right, people in China have all sorts of pronunciations (the most surprising one I noticed in Changsha is that older locals pronounce their own province "Hunan" as "Funan"). The standardization of Mandarin (putonghua) was introduced fairly recently considering China's long history, and has only been pushed more strictly since the People's Republic was founded. Many people (especially older generation) still confuse Mandarin with their local dialects, so even Chinese people can have difficulty understanding each other. You'll notice this more in the South because Standard Mandarin is based on the northern dialect. Overall, I would say learning the standard pronunciation is definitely important, but in practice don't beat yourself up too much over it!
