We have so much fresh coriander from the garden after letting the plants go to seed. We get probably two cups of seeds each year. The difference in flavor was astounding.

Right on, I only ever used crushed coriander in my lintel coconut curry. Some great ideas with the blackened fish and use of aromatics in rice!

This is a great idea for a series, and you started with (probably) my favorite spice! I've always said that ground coriander smells (and even sorta tastes a little) like Trix/Fruit Loops.

Oh I love this series idea! It's a nice way to give bit of an overview how to use an ingredient in various ways, even if you don't need to use up a batch going bad. But I have to say that my parents have had some coriander seeds for maybe a decade, and they are still fragrant when ground up. Maybe not as strong as fresher ones, but definitely still usable.

You just need to use more as they lose potency but the oils in there can still go rancid if you leave them too long. Also I’d you use too much to make up for lost flavor it runs the risk of making the dish bitter. Otherwise old spices stored well are fine.

@@jonkung Whoa, I know this is likely rudimentary information, but I've never considered this layered aspect to using "dry aged" spices. I've seen tons of starred Chefs making food and talking about recipes and techniques, but never nuances regarding seasoning with whole spices like you just shared. Thanks again, Chef!

Great idea for a series! I never thought coriander seeds had a fruity or sweet aroma but I've only ever had it in savoury foods (like Boerwors) where it's hard to pick it out. Definitely going to try doing this! Also, I really liked towards the end where you described what the spice was doing when added to the food. Learning that a spice works well on a particular food is great but knowing WHY it works is so much more useful. Now I know to try adding coriander seeds if I feel like something could use a bit of sweetness to balance it out!

Coriander seeds is my favorite spice. It’s use it in everything that I can get it in. Including fried rice lol.

Dhane seeds are INTEGRAL to my cuisine (regional indian) so much so that every day you can see atleast one family roasting those seeds to grind, in my apartment place. So much so that it is a commonplace smell. I'm not the biggest fan since I smell it everyday but some people like it. Not to discount Kothimbir (coriander leaves) which is also heavily used here. We literally have a bhaji/fritter called kothimbir vade.
