With only a few simple ingredients, you can can make the smoothest vanilla infused custard with lightly caramelized top. It's a French classic that is satisfying and easy to make. It's served cold with a warm top.

Ingredients
Egg yolk 40g
Sugar 17g
Milk 55g
35% cream 125g
Vanilla 1/4pcs
Cassonade (for topping) QS
1. Split the vanilla bean in half and scrape the seeds. Add the vanilla seeds to the sugar and reserve the pod.
2. In a small pot, add milk, cream, vanilla pod, and half of the vanilla sugar. Bring the liquid to 60C, and cover the infuse for 30min or overnight.
3. Preheat the oven to 120C. Mix the egg yolk with the rest of the vanilla sugar, and add the liquid. Pass the custard liquid through the sieve into a baking dish. Remove the bubbles on top.
4. Make a water bath with 40C water, and bake the custard in the water bath in preheated oven. 120C for 15min. Chill in the fridge.
5. Sprinkle the top with sugar and torch it until it’s melted and browned. Sprinkle more cassonade and repeat.
6. Serve immediately.
