Savoury Khaja / Banana Puri
Recipe adapted from: Red Indian Delights
Additional Salt and Cumin addition by whatsummicooking.
You will need:
For the dough:
2 cups plain flour
1/2 tsp Baking Powder
60g soft butter
1 tsp salt
2 tsp crushed cumin seeds
+ - 1/2 cup Cold water
Extra for dusting and smearing:
Melted ghee
Corn Starch
Mix the Flour, salt, cumin.and baking powder.
Rub the butter into the flour to resemble breadcrumbs.
Tie a firm dough by adding the water slowly. You might need more or less.
Divide the dough into 8 pieces.
Roll each into a thin circle dusting with corn starch if needed, about 7.5inches in diameter.
To one circle, apple ghee and sprinkle corn starch on top with another circle. Stack until you have 4 layers.
Complete stacking with the rest of the circles.
You will now have 2 stacked dough circles of 4 layers each.
Roll each stack to a 30cm diameter.
Smear ghee and sprinkle corn starch.
Roll into a swiss roll.
Cut the swissroll into 1 1/2cm pieces.
Press each piece down and roll gently.
Deep fry on a low heat till lightly golden.
Fry with care so the layers do not open up.
Drain over a wore rack for an hour.
Place flour in a large tray, about 2cm high.
Put Kitchen paper on top of the flour.
Place the puri on top of the kitchen paper and allow to drain further overnight.
Remove puri and store in an airtight container lined with kitchen paper.
