Ingredients:
8 Bread slices
1 tbsp finely chopped onion
1 tbsp finely chopped green chili
1/2 tsp chili flakes
1 grated carrot
50 grams grated paneer
3/4 cup cooked corn
1/2 cup cooked green peas
1 grated cucumber
1 finely chopped tomato
3/4 tsp black pepper powder
3 tsp veg. mayonnaise
1/2 lemon juice
1 tbsp chopped parsley leaves
3 tbsp grated cheese
Salt to taste
Cooking oil
Butter
Step-by-Step Instructions:
1. Prepare the Paneer-Carrot Mixture:
Heat a pan with 1 tsp cooking oil.
Add 1 tbsp finely chopped onion and 1 finely chopped green chili. Add salt to taste.
Sauté until the onions turn translucent.
Add 1/2 tsp chili flakes and cook until the raw smell goes away.
Add 1 grated carrot and 50 grams of grated paneer.
Cook for 3 minutes, then turn off the flame.
2. Mix the Vegetables:
In a mixing bowl, combine:
3/4 cup cooked corn
1/2 cup cooked green peas
1 grated cucumber
1 finely chopped tomato
3/4 tsp black pepper powder
Salt to taste
Add the sautéed paneer-carrot mixture to the bowl.
Mix in 3 tsp veg. mayonnaise, 1/2 lemon juice, 1 tbsp chopped parsley leaves, and 3 tbsp grated cheese.
Stir everything well and set aside.
3. Assemble the Sandwich:
Take 2 slices of bread and spread a generous amount of the paneer-carrot mixture on one slice.
Cover with the other slice of bread.
4.Toast the Sandwich:
Heat a pan with 1 tsp of butter.
Once hot, place the sandwich in the pan.
Press down with a spatula and toast until the bread is golden brown and crispy.
Flip the sandwich carefully and toast the other side.
5. Serve:
Once both sides are toasted, remove the sandwich from the pan.
Cut it diagonally into two pieces.
Serve hot with ketchup or chutney of your choice.
