This Recipe will make 8 Spring Rolls ! Turns out to be amazing. It is easy and yummy.

Ingredients-
For the wrapper-
1 cup maida
1 1/2 tsp cornflour
Salt to taste
A little more than 1/2 cup water
For the filling-
1 tbsp oil
1 onion, sliced thinly
2 spring onions, bottom part, sliced diagonally
3-4 cloves of garlic, chopped finely
2 green chillies, slices
1/2 inch piece ginger, chopped
1 cup mixed veggies ( bell peppers, carrots, beans, spring onion greens), cut into julliennes
1 bowl shredded cabbage
1 tbsp chilli garlic sauce
2 tbsp light soy sauce
1/2 stock cube
Salt and pepper to taste
Others-
2 tbsp water + 2 tbsp maida, to make a slurry
Sweet chilli sauce, to serve
Method-
To make the wrapper,
Heat water in a saucepan to boiling.
Alongside, whisk together all the ingredients to make a thin batter.
Pour a spoonful of the batter on a non stick pan(at room temperature), spread it out and place it on top of the boiling saucepan.
Keep for 45 seconds until you see the sheet turning translucent.
Remove and peel off. Repeat and make all the sheets.
Place them one on top of the other. Ensure not to keep both sticky sides together else they will stick to each other.
Cover with a damp cloth and set aside.
Now, for the filling heat oil in a pan on high flame, add in the onions, ginger, garlic and chillies.
Saute and cook for 2-3 minutes and then add in all the remaining veggies.
Mix well and add the chilli sauce, soy sauce, stock cube, salt and pepper.
Mix well and cook on high flame until the moisture is evaporated.
Remove from flame, transfer the mixture to a plate and cool it to room temperature.
To make the spring rolls, take a sheet and place a generous amount of filling in the centre, compress it and apply the slurry onto the edges.
Fold the sides and make a spring roll as shown.
Repeat for all and deep fry in oil on a medium high flame until golden brown.
Remove, cut and serve immediately.

The batter shouldn't be too thick or too thin and watery.
While piling them on top of each other, ensure not to keep both sticky sides together.
Cooking on a high flame will impart a good flavour and at the same time the veggies won't release much water.
Always make sure filling is at room temperature before filling the rolls.
Fry at Medium High temperature
Serve Immediately.
