Totally agree! I get it. I only go to chipotle when I have no time as well. The good thing about most of these components is that they will stay good in the fridge for several days so you can make this part of your meal prep!

This was my first time cooking with tofu, but your videos are so helpful that I felt like I knew exactly what I was doing. It took me 3 hours (the first time you make a recipe always takes much longer), but this was sooooo good! I made the tofu sofritas AND the black beans, salsa, guac, rice, & fajita veggies, and I will feast on this all week. I love love love these recipes and I'm sharing with my friends who were here for dinner. Thank you

Ohhh....I am a spice wimp and hate cilantro (ech, soap!) but this video inspired me to attempt variations for myself for meals this coming week! Love the relationship with your parents, miss my father (who also wore an English cap, but died almost 6 years ago) and will be seeing my cook mother in December. We already have plans to spend time in the kitchen making traditional English foods, and I treasure those moments.

I find Mexican oregano seems to have larger hard stems that I always choke on, so have to crush first before using. It’s a pain so I rather not use it.

Tried it, tastes very good. I made enough for 2 days. For 1st day I put it in a wrap and for 2nd day I had it as the bowl. Great for meal prepping. Stays well in the fridge. Loved it for work lunch. Even my brother loved it. Thank you for another great recipe.

I made every component of this dish today. I did make my own black beans in my instapot, instead of canned black beans. I’m not vegan or vegetarian however we have been incorporating more and more Vegan/ vegetarian items into our meal rotation. All I have to say is thank you so much for putting this all together. It all worked so deliciously well and you do not miss the meat at all. This was so so good. Be patient all these things take time to make but omg when you’re done and you get to make your bowl you will be doing the happy food dance!!!

me and my husband just made this and OMG it’s so much better than chipotle. i even made it without the garlic and only used red onions in the salsa because i’m having weird food aversions during my pregnancy. but the food is so flavorful even without the garlic and onions! i’m obsessed. thanks for sharing ❤

I like to zest my lime into my guac and salsa to up the lime flavor. This is also a great trick for anyone who doesn't like cilantro or can't get it fresh.

She's awesome! Thanks to Nisha I've been cooking at home for years (since I found her channel). I used to follow another channel on Cooking Channel TV for vegan recipes. The difference between fast-food-packed and homemade is vast! Nisha helped me not be too lazy and make large batches of different meals for each week. I believe she has a few videos on how you can prepare weekly meals, so you are not cooking every day, just reheat and eat as you go. Highly recommend those videos.

Love that tomato hack to drain some of the liquids! This looks delish but a lot of work so I'd probably make the beans, sofrito, and salsa in advance, then on the day to eat it, make the rice, fajita veggies, and guac. Thanks for the great recipe with clear instructions.

Soy, nightshades, AND corn?! That is ROUGH. I'm allergic to Torani brand caramel coffee syrup (which is used in most coffee shops) and earl gray tea and I thought MY food allergies were hard to deal with!

Oh, yeah. I actually can’t eat any grains, and I’m also allergic to goji berries, which seem to be in everything these days. 😂 My nightshades and soy allergies mean I can’t even take 99.99% of OTC meds, and I’m also allergic to all the c0ca- based RX meds and basically anything that ends in -cet. There is a minor surgery I’ve needed for years but I’m allergic to anesthetic and no doc will sign off on it after the risk/benefit analysis. 😅 I live my life very carefully so I hopefully don’t require emergent care. I am also VERY allergic to fuel fumes and mainstream laundry products. I take antihistamines and herbal suppressants twice a day for maintenance and carry my epi-pen on me at all times, plus keep three kinds of antihistamines on hand at all times. I am the very unfashionable person wearing a waist pack actually around my waist whenever I leave the house. 🤣😎 BUT I am better today than I was five years ago or even a few months ago. And I’ve had to learn a whole lot about herbalism and other traditional modalities so that I can live a better life, and that means I’ve been able to help other people, so that’s not so bad. Bodies and their frailties are weird and even gross sometimes but the healing potential we all have is really cool and fascinating.

MMM last week I made the sofritas and put it over my own homemade black beans (although I plan to try yours soon) and jasmine rice as well and it was tasty! It really does have the texture of chicken I used extra firm tofu and the cornstartch really helped! I don't live near a whole foods but I am fortunate to find super firm tofu at my local walmart!

Better than Chipotle? It doesn't take much. I tried to like Chipotle but after three attempts, I got sick every time.

I just made some burritos/burrito bowls with tofu last night. I used a couple tricks I saw on sauce stache: first I boiled the tofu in salted water, then I crumbled it and baked it in the oven. Then I seasoned it and sauteed it with some onion, mushrooms, and spices. It was very meaty! There were some crispy bits, some softer bits, and overall just a great texture. Highly recommended!

I agree with you on the green bells. My entire mouth was watering from thinking about all the flavors.
