Today we are making a vegan caramel apple crème brulee. This is going to be an eggless, non-dairy recipe. I like making vegan recipes like these because it strays from the traditional way of making a crème brulee and lets you be creative with your cooking. Another nice thing about this recipe is that you also don't need a torch or even an oven.
Ingredients:
1) ½ apple
2) Caramel (to taste, ~3tbsp) (check out my vegan caramel recipe video)
3) 100ml coconut milk
4) 100ml soymilk (or any other milk)
5) 25g brown sugar
6) 15g tapioca starch (or any kind of starch)
7) 1tsp cinnamon
8) ¼ tsp agar agar
9) ¼ tsp vanilla extract
Instructions:
1) Peel apple and slice thinly. Line the bottom of ramekin with apple slice and caramel.
2) Mix coconut milk, soymilk, sugar, tapical starch, cinnamon, agar agar, vanilla extract, and blend for about 1 minute.
3) Pour mixture in a pot on medium and stir until it thickens up.
4) Pour into your ramekin over your apple. Cool in the fridge for about 1hr.
5) Hot spoon method: In a hot pot use about 3 tbsp sugar and 1tsp water. Give it one swirl and do not agitate pot again. Let the sugar melt and turn brown. Pour this over crème brulee to get a thin coat
