For years I have very very often replaced crème fraîche with vegan cream. It's so easy to cook! Oatmeal cream, cashew cream, nut cream, the possibilities are endless! What I like about this homemade crème fraîche (a liquid crème fraîche) is that it is very smooth, that the oatmeal taste disappears. This cream is thicker than oat milk but remains liquid. If you want it even thicker you can reduce the amount of water. The cream will keep for up to 4 days in the fridge. Good tasting !

240 g (3 cups) oatmeal
600 ml (2 cups + ½ cup) cold water
Salt
3 tablespoons of quality olive oil
