ORANGE GLAZED CAULIFLOWER

INGREDIENTS:
- 1 cauliflower with a few leaves
- 3 oranges
- 2 spring onions
- 100 g chickpea flour
- 230g water
- bread crumbs
- 1 hot pepper
- 4 tablespoons of soy sauce
- 2 tablespoons of maple syrup
- 2 tablespoons of sesame seeds
- 1 tablespoon of flour (or 1 teaspoon of corn starch)
- a few fresh parsley leaves
- extra virgin olive oil
- salt
INSTRUCTIONS:
- Wash the cauliflower well, remove the outer leaves, and make bite-size bites. Also cut the stem into small pieces and keep the leaves aside.
- Prepare the chickpea flour batter by mixing the water with the chickpea flour a little at a time. Place the breadcrumbs in a bowl
- Evenly coat the florets in the batter and then coat well with the breadcrumbs.
- Heat 4 tablespoons of oil in a pan and cook the florets over medium-low heat, stirring occasionally. They must cook for about 10 minutes forming a nice crust.
- While the cauliflower is cooking, squeeze the oranges and put the juice in a jar or bowl, season with the soy sauce, sesame seeds, flour and maple syrup. Mix well and keep aside.
- Wash and cut the spring onion, cauliflower leaves and chilli into slices (adjust the amount of chilli according to the desired degree of spiciness).
- When the cauliflower bites are golden brown, remove them from the pan, add another 3 tablespoons of oil and sauté the spring onion, cauliflower leaves and chilli pepper for a couple of minutes, stirring often.
- Add the cauliflower bites and blend everything with the orange juice sauce. Stir gently, let it thicken and serve by adding a few more sesame seeds and some chopped fresh parsley..
