I wish I never made this,,,, because it's So Good, I'll be making this chicken all the time! I made the chicken with extra firm pressed tofu so it's more firm and easier to handle, hardly any wasted crumbs. Used regular flour and baked it, turned out perfect. I liked the honey butter glaze but that will be a once in awhile treat. The chicken though it's going to be a staple. The cold leftover, unglazed nuggets taste just like cold fried chicken. Seriously, great nuggets. Wish I could post a pic.

I've watched all of your vegan fried chicken recipes and I just want to say I love how you show that you can change things up and try new things (like using flax instead of vegan egg and cereal flakes instead of rice crispies) I love your channel so so much!!!! Such a inspiration!

Mary, i just made this in Germany. Medium form tofu can only be found in Asian grocery stores so i took your recipe on a spin with organic firm tofu i had in the freezer. Apart from the non-chickeny structure, it turned out golden, crispy, and delicious. Thank you for that tofu goodness!!

Mary, I made this today! OMG, truly amazing.. Double this recipe, folks! Seriously, I could have easily eaten the entire dish by myself. Very dangerous, this is hard to stop eating. I used the flax, and only had the brown flax on hand. It worked perfectly. I oven-fried the nuggets, they were so crispy and good. I did not have vegan apple-honey so I used maple syrup in its place. Thank you for the genius recipe!

I love your recipes Mary, so yours is the first youtube channel I have actually subscribed to:). Recently my son 13yr, who has been eating vegan since 8, said to me "I don't like vegan food anymore". I've been making "chicken" using pressed tofu for YEARs. but always with extra firm or firm. But holly crap this double frozen/thaw method is mind-blowing. I'm absolutely going to have to try it!

:D I tried something a little different and it turned out really well! I did pretty much the same thing but I switched some steps around. I did not put the tofu directly into the freezer, I squeezed out the liquid (this only works with extra-firm tofu; NOT med-firm) and put it into a container with stock/broth - then froze it twice. This allowed me to drain and cook right away with the flavours already in there :) Yummy! Thk U!

Did you use medium tofu and get flaky layers? I found it was impossible to press well without freezing first.

I used firm cuz you're so right!! When I tried pressing out the med-firm it fell apart (I just put it in a container and used it for tofu scramble). Firm worked great tho :)

?? No, they weren't spongy. I just looked at the package... it's Sunrise brand (non-gmo) and it's Extra-Firm. I will go tag my instagram for you to see :)

But it turned out spongy right? Not to knock your style at all though! I know frozen marinated bbq tofu is awesome using firm or extra firm tofu. Just to be clear, it's really not the same as using this particular technique with medium firm tofu.

I made your regular fried chicken recipe and coated them in sweet chili sauce! Soooooo good. Even my mom loved them plain with bbq sauce! I can't find vegan chicken broth where I live so I use regular vegetable broth and add a bouillon cube for extra flavour, as well as lots of fresh thyme! Works very well and still tastes like chicken :)

Mary I also made your fried chicken and it was 👌! ! It was amazing how the tofu transformed and totally worth all the prep! I’m too lazy to make it enough to be memorized but it will definitely be in my ‘once in awhile’ rotation. Do you have any other recipes that use the same method but create something else? The fried chicken with different flavours and sauces is amazing, but the method is so cool it deserves to have many many treatments! Cheers!

I will try to make this! So you freeze twice of the tofu? i.e. freeze once, take out, thaw and then put in the fridge again, correct (I wanted to make sure what you said)

Confession time...I was rushed and lazy and only froze and defrosted tofu once. Not a great idea. I used coconut nectar instead of honey....amazing!! Going to check out your "honey" recipe next. Almost 9:00 p.m.and now I'm hungry...must resist temptation....AWESOME video😸👏

Nice. Consider Panko instead of corn flakes and if you add a little oil to batter you can use an Air Fryer

I find too many vegan KZitemrs use "dumbed down" generic ingredients even when they're not as good, presumably to appeal to a broader audience and increase views/subscribers. I appreciate you including that as the honest [and better] alternative! I've subscribed. PS: any thoughts on "Vegg" or the "Neat Egg"?

@@marystestkitchen You're right! And thank you for doing that. I have tried Vegg and LOVE it. I've made a bunch of vegan fried seitan like Candice's (EdgyVeg) "Popeye's" recipe. It always turned out fantastic and quite egg-like. I've heard it's even better than VeganEgg, but I still need to try that.

I don't think I've seen vegan chicken broth in stores before, but I have a feeling that it's made with sulfur shelf aka "chicken of the woods" mushrooms since, well, they taste just like chicken.
