It’s #TastyTuesday with a vegan dessert; mini key lime pies! Yum yum
Equipment:
* Blender or food processor
* Muffin tin
Ingredients:
CRUST:
* 2 cups vegan graham crackers (brand used Nabisco grahams original)
* 1/2 cup palm shortening
FILLING:
* 1 cup raw cashew nuts
* 1/2 cup full fat unsweetened coconut milk
* 1/2 cup lime juice
* 1/4 cup agave syrup
* 1/4 cup coconut oil
* 1/8 teaspoon sea salt
Optional: Grate a fresh lime over each mini pie.
Directions:
1. Preheat oven to 375°F
2. Crust:Add graham crackers and palm shortening to a blender. Blend until fully mixed and crumbly.
3. Add the mixture into the bottom of the muffin tin. Press down with a spoon until flattened.
4. Bake the crust for 8 to 10 minutes until golden brown. Let cool before adding filling.
5. Filling: Add all filling ingredients into a blender. Blend for a few seconds until smooth and creamy.
6. Pour filling on top of each crust. Use a spoon to flatten and smooth.
7. Optional: add lime zest on each mini pies.
8. Refrigerate 1-2 hours until solid.
9. Let thaw 5-10 minutes.
10. Enjoy!
