Hi Friends, today, I make a vegan variation of "Mosama Kadoo Bademjan" (مسمای کدو بادمجان), including potatoes which are not traditionally found in the dish.
I've gotten quite a few requests for a vegan dish, and while many of the stew dishes I make can be made vegan by forgoing the meat, this one is one of my favorite pure vegan dishes I make at the house. Now, this is not a traditional "Mosama", as I add potatoes and other slight variations, but, I hope you love it as much as my family, especially when you want a healthy, flavorful dish that doesn't take long to cook.
Ingredients List:
3 Eggplants
3 Mexican Zucchini
3 Potatoes
2 Onion
2 Tomatoes
2 Tablespoon Tomato Paste
1 Teaspoon Salt
1 Teaspoon Black Pepper
1 Teaspoon Turmeric
4 or 5 Tablespoon Liquid Saffron
1/4 Cup Sour Grape Juice (or 1 lime/lemon)
1/4 Teaspoon Cinnamon (optional)
Cooking Oil
