As we shared these delicious tacos with a bunch of our friends, we realized that jackfruit is like that mysterious Dum Dums flavor: it tastes so yummy but no one really knows what it is! Oh, did they find out! They consumed them with wild abandon mmm'ing and ahh'ing! Get your jackfruit game on, guys, and surprise your friends at the next BBQ! Replace pork with forks!
INGREDIENTS
5 dried guajillo peppers
3 dried chipotle peppers
1 habanero pepper
1 chile de árbol
5 garlic cloves
2 tbs of achiote paste (achiote powder mixed with a bit of water)
1/2 cup pineapple chunks
1/2 cup pineapple juice
1/4 cup white vinegar
1) Blend all ingredients
2) Heat two 20 oz cans of drained jackfruit over medium heat, shredding the jackfruit as it heats.
3) Season jackfruit to your preference. We used oregano, chili powder, and cumin.
4) Mix in al pastor sauce.
5) On a skillet, crisp some corn tortillas with non-dairy butter. We used Miyoko's.
6) Make your tacos! Spritz some fresh lime juice and top with fresh tomatoes, onions, cilantro, and/or your favorite vegan dressing!
