Ingredients:
* 2 cups cooked sweet potatoes (skin peeled off)
* 3/4 cup canned coconut cream
* 3/4 cup cane sugar
* 2 tablespoons corn starch
* 1 teaspoon vanilla
* 1 teaspoon ground ginger
* 1/2 teaspoon nutmeg
* 1/2 teaspoon cinnamon
* 1/2 teaspoon salt
* Pie crust (Brand used: Marie Callender)
Directions:
1. Preheat oven 375°F
2. Add all ingredients to blender. Blend until smooth.
3. Pour filling into pie crust, cover with foil paper or parchment paper and bake at 375°F for 30-40 minutes. Half way through remove foil or parchment paper.
4. Refrigerate until it becomes firm.
5. Top with your favorite cream and cinnamon and enjoy!
Pie crust tip: If using Marie Callender frozen pie crust you must bake it for 10 minutes, let it cool then add your filling. Otherwise your bottom will be soggy… trust me I know from experience 😣 lol
