Recipe:
Ingredients:
100 gr. Celery
350 gr. Carrots
150 gr. Onion
150 gr. Courgettes (the 4 basic ingredients).
1 tablespoon of tomato paste.
300 gr. romaine lettuce
100 gr. rice (Arborio or Carnaroli)
In a large pot for 2/3 litres. of water.
Add the salt.
First, put the 4 basic ingredients in the pan
cut into fairly large pieces.
Add the tomato paste.
After about 30 minutes add the romaine lettuce,
and mash it gently into the broth.
Continue cooking for about another 15 minutes.
With a colander placed over a large bowl
separate the boiled vegetables from their vegetable broth.
Use vegetable broth (actually only part of it is enough)
for cooking rice.
Cook the rice al dente, also because it will continue slightly
cooking during table service.
In the meantime, make the puree with the boiled vegetables:
the ideal would be to use a manual or electric food mill,
but for convenience we can use a mixer with blade tool.
Start the mixer intermittently and mix the contents with a spatula, to maintain uniformity and a certain graininess, similar to that which would be obtained with a food mill.
When the rice is cooked, turn off the heat and add some
spoons of the freshly made vegetable puree, until you obtain
a fairly thick soup, as seen in the video.
Optional: Add a stick of butter and stir to melt it into the soup.
If you want, before serving, let the pan cool in cold water for 1 minute.
Bring to the table and serve on individual plates, then sprinkle
with grated Parmesan on each plate. If the soup is really hot, wait, because the Parmesan could melt and run.
Something to always avoid.
Obviously the vegetable purée and broth were not used
they must be set aside in the refrigerator
in a container and in a bottle respectively; leaving as little air as possible in both for good preservation.
This is a truly healthy and delicious dish, and one of the best ways
to offer vegetables to children.
