This quinoa vegetable salad is a wonderful dish - it's light and very tasty. I am loving this cold Quinoa Vegetable Salad. It’s loaded with fresh summer vegetables. You can use your favorite veggies, but I used cucumbers, tomatoes, besil , green chili,avocado, black beans and with an easy lemon and olive oil dressing. This salad is naturally vegetarian, vegan, and gluten-free but there are plenty of ways you can add additional protein. Quinoa is a great whole-grain source and has a high fiber content for optimal digestion, steady blood sugar and lower cholesterol and packed with nutrients like protein, including magnesium, zinc and iron .
Ingredients:
Cooked Quinoa 3 cups
Cucumber 1 cup
Tomato 1 cup
Avocado 1 cup
Cilantro 1 cup
Carrot 1 cup
Black beans 1 cup
Black Pepper 1 tsp
Besil leaves 5 / chopped
Green Chili 1 tsp
Salt 1 tsp
Lemon 1/2
Olive oil 1 tsp
