Before storage, always dry the vegetables under fan immediately after purchase to remove the moisture/ water content
II The storage tips and tricks works best with the quality of vegetables available and the climatic conditions in the place I live

Bitter Gourd - Store without turning yellow
1. Purchase, wash and shade dry
2. From the bottom side, slit the bitter gourd halfway, into 2 (do not cut
completely). Leave about 1 cm at the end and maintain the intact
3. Keep it inside a cloth cover and store in your fridge vegetable
compartment
4. Shelf life tested: 7 days
5. Tried and tested with long bitter gourd variety

Papaya
1. Cut the papaya immediately after buying
2. Store the cut papaya in fridge
3. Shelf life of papaya is dependent on the age of the papaya
If papaya is overly ripe - very soft to touch the shelf life is only 2 days, maximum
4. Water is the main culprit when we store fruits/ vegetables
Dry the papaya well before storing
Ensure even the cutting board is dry without water droplets
Use clean dry hands when taking the papaya out of the fridge (if
going to use more than one time)
Ensure the water droplets on the lid of the papaya container is
wiped off, each time when taking out of the fridge
5. Maximum shelf life tested with the above parameters is 5 days
6. All the items stored in fridge has reduced shelf life, if there are voltage
fluctuations and/ or when the fridge is opened and closed more than often required

Ginger
1. There are 2 types of ginger available in market
2. The ones washed need no additional step, air it out and store directly
3. The ginger with soil - Wash the ginger completely, under running tap
water
4. Place the ginger on a clean cloth and fan dry (Do not sun dry/ no direct
sunlight)
5. Take an open container. Place (folded thickly as shown in the video) a
kitchen tissue/ kitchen roll paper lining the bottom of the container. Avoid newspaper as they have lead content in the prints
6. Do not cover the ginger, Fungus growth is faster in closed containers
7. Place the container in the corner of the vegetable storage box - To avoid
mixing with other vegetables and it gets a dedicated space
8. Tested Shelf Life: Properly cleaned, dried, stored - Good about 20 days
without shrinking
9. If the ginger not cleaned/ dried properly or if there are voltage
fluctuations in the fridge - First indication of spoiling ginger is mild
fungus
10.This is one of the many ways to store ginger. This has suited me well

Banana Leaves
1. If the banana leaves can be chosen, choose the ones that are not too tender. This storage method does not work for tender leaves.
2. Here in the place where I live, banana leaves are mostly packed and sold. So, I choose the roll in which the banana leaves tips are not dry.
3. If buying unpacked banana leaves, at home wrap the as shown in the video and secure with a rubber band. Do not wash or clean.
4. Little moisture content on the leaf is fine. Ideally packing 2 leaves as one unit is better for storage and usage.
5. Take a jug or container as shown, fill upto 3 - 4 inches with water A glass or any transparent jug is preferred
We can see the change in water colour - Change if required Tested upto a week without changing the water
6. Place the wrapped banana leaf in the water. Tip at the top. Ensure the wrapped paper does not touch the water
7. Place in a cool, dry place
8. When using take the required ones, wrap, and immediately store the
rest
9. The tender top part of the leaf, starts drying first
Use them up as early as possible the tips start drying
10. Tested upto 15 days
