It is so hot here in Colorado right now I cannot use the stove- but with some ingenuity I bet I can use my grill to melt and brown that intoxicating mix on a sheet pan. I can’t wait. I always fry my mushrooms sliced in olive oil and place them on absorbent paper towel before using it in other dishes like pizza, to get rid of the moisture content. No salt or anything else. It also brings out the mushroom flavour I'm looking for. Really like the look of your recipe, will give it a go.

Yum! Turkish string cheese is so yummy and deserves way more fame, but definitely a little saltier than mozzarella. You can mix the two if you want less salt.

This is much like the Mexican Queso Fondito made with Oaxacan cheese, they also sometimes pair with muchrooms, or roasted peppers (cut in strips) or Mexican chorizo (my favorite combo) and always best with fresh made corn or flour toritillas. It’s delicious, as I am sure yours is as well.

I bottle this basic recipe, without cheese, with a little lemon juice and/or malt vinegar, sometimes with a dried chilli in the bottle, I eat it on bread, add it to salad or as a relish with anything, lasts ages in the fridge. Thanks so much for this, it really gave me ideas.

I need to try this with forest mushrooms, white button mushrooms are boring, I would mix them with a few pieces of Boletus sp. (probably B. edulis or B. reticulatus since they are the most common of the "true boletuses" as we call them in our forests), that should be good. Some chanterelles or black trumpets might work, too.

I love this one for summer. A I really don't eat much in California summer - it is hot !! B. 8 I don't like to stand in the kitchen at all if I can help it. Now that my kids are all grown up and live about 1/2 hour and 1 hour away I am able to do all that. And this is even a great one ro make real quick and take over to my sons house for any last minute get together etc or if they are coming over
