INGREDIENTS
Water, 2.125 cups
Tomato paste, 2 tbsp
Chili powder, 2 tbsp
Cinnamon, 1/2 tsp
Garlic powder, 1 1/2 tsp
Cumin, 3/4 tsp
Ground allspice, 1/8 tsp
Ground nutmeg, 1/8 tsp
Red pepper flakes, 1/4 tsp
Salt and pepper, to taste
Sugar, 1/4 tsp
Red wine vinegar, 1 1/2 tsp
Ground venison, 12 oz
Sweet onion, grated, 1/2 medium

THE COOK (10 minutes + 1 hour 10 minutes)
Preheat your grill to 275 - 300 F
On a stove top, add vegetable oil to a cast iron pan. Once hot, add the ground venison, spreading it out to sear for 3-4 minutes. Break and toss the meat, continuing to cook for another 5-8 minutes until well browned. Remove from the pan and set aside.
Add a bit more oil to the pan, then add hand-crushed garlic. Cook for about 1 minute until fragrant. Add the grated sweet onion and cook until translucent, about 4 minutes.
Stir in tomato paste and cook until it starts to caramelize slightly. Season with salt.
Add the water, all of the dry spices, and the tomato paste. Return the cooked venison to the pan, and stir everything together. Bring to a boil, then put it on the preheated grill to simmer for about 1 hour, stirring occasionally.
Grill the hot dogs and toast the buns. Place the hot dogs in the buns, top with the chili, and serve with freshly grated cheddar cheese.
