Venison Sauce Piquante
Deer Sauce Piquant / Piquante
- 1 cup flour for the roux
- 1 cup oil/lard for the roux
- Trinity:
2 medium yellow onions
1 bell pepper
3 stalks celery
- 2 cayenne peppers
- 1 tablespoon minced garlic
- 3 lbs venison (cubed)
- 1 lb smoked sausage
- 1 can tomato sauce (15oz)
- 1 can Rotel
- 2 cups sliced mushrooms
- 8 cups chicken broth
- 2 lemon wedges
- 1 bunch green onions
- 1 tablespoon salt
- 1 tablespoon Tony’s Creole seasoning
Let simmer for about 2 hours
Serve over rice
