Well after having a successful hunt during the Late Muzzleloader season, we get down to processing our harvest! I want to quickly apologize for my slight technical malfunction I had with a mic, I fixed the footage as best as I could. However, if you are looking for a way to make your wild game I'd highly recommend this!
We used the High Mountain Seasoning Summer Sausage kit. It's a one stop shop for all of the seasoning, cure, casing and instructions! We used 11 lbs. of venison, 4 lbs. of boston butt, 1 lb. of high temp cheese and 1 lb. of jalapeños! The cheese and jalapeños need to be purchased separately. We also made goose summer sausage which consisted of 5 lbs. of goose (I would've used more but didn't have any more eat) and 10 lbs. of boston butt.
With this being the first time I had ever made this, I was surprised at how easy it truly was. With the use of a grinder and mixer we were able to quickly prep everything to let it set in the cure. Everyone that has tried this so far has found it to be delicious!
