Ingredients:
450 g chicken breast (dice)
2 tbsp. light soy sauce
1 tsp. oyster sauce
1 tsp. ginger and light soy sauce
1 egg (beaten)
1/4 tsp. salt
1/4 tsp. black pepper
1 tsp. paprika
500 ml oil (for frying)
For dipping sauce:
2 tbsp. unsalted butter
2 tbsp. flour
250 ml low fat fresh milk
50 g cheddar cheese (grated)
1 tbsp. parsley (optional)
For coating:
1 cup flour
1/4 cup cornstarch
Cooking Procedures:
1. In a bowl with chicken breast, combine light soy sauce, oyster sauce, ginger and garlic paste, egg, salt, black pepper and paprika. Mix thoroughly then set aside to marinate for 15 minutes.
2. While marinating, heat the sauce pan on medium low heat, put the butter to make roux.
3. Add cheese and mix to melt followed by milk. Simmer until cheese melts. Add parsley and mix again then turn off the stove.
4. Heat wok on medium heat and pour in the oil to reach 180 degrees Celcius. Combine flour and cornstarch in a bowl and mix.
5. Dip marinated chicken in the flour then fry for 3 to 5 minutes or until golden brown.
6. Remove chicken popcorn in hot oil and transfer to a serving bowl.
7. Serve with cheese dipping sauce and enjoy.
