Ingredients:
Base: 400 g of cocoa biscuits. Blend.
Add 190 g of melted butter and mix thoroughly.
Place the cookies on the bottom of the baking tin (25x35 cm). Line the bottom with baking paper.
Curd:
1 kg of cottage cheese from a bucket
500 g of mascarpone cheese
200 g whipping cream 36%
a pinch of salt
7 whole eggs
90 g of wheat flour
30 g of vanilla sugar
1 cup of sugar
All ingredients should be at room temperature. Mix at the lowest speed just until the ingredients are combined. Pour the mixture onto the prepared base.
Place the cake in the preheated oven. Bake for 90 minutes, without convection, top-down heater, at 140 degrees C, 2nd layer from the bottom. Place a baking tray filled with hot water at the bottom of the oven. Do not open the oven while baking. After baking, leave the cake in the oven for about 3 hours.
Roast about 5 tablespoons of almond flakes in a dry frying pan.
Pour 250 g of the kajmak mixture on top of the cake.
Sprinkle with almond flakes.
