Recipe
First dough with liquid sourdough starter:
333 gr high protein flour (w300/380)
100 gr sourdough starter
233 gr whole egg
100 gr sugar
100 gr butter
Or
First dough with stiff sourdough starter:
333 gr high protein flour (w300/380)
75 gr sourdough starter
25 gr water
233 gr whole egg
100 gr sugar
100 gr butter
Rise at 26 degrees Celsius till triple (12/16 hours)
Second Dough:
All the first dough
66 gr high protein flour (w300/380)
66 gr egg yolk
6 gr malt
5 gr salt
Add in 4 time the emulsion prepared in advance with:
100 gr soft butter
50 gr icing sugar
16 gr honey
30 gr Aroma Mix (not in the original recipe)
33 gr white chocolate
16 gr cocoa butter
