Delicious Beetroot Rice Recipe

*Beetroot Rice Recipe*
*Ingredients:*
1 cup basmati rice -cooked
1 medium beetroot, peeled and grated
1 medium onion, finely chopped
1 green chili, slit -optional
1 teaspoon ginger-garlic paste
1 teaspoon cumin seeds
you can add
2-3 cloves
2-3 cardamom pods
1 bay leaf
-1 teaspoon chilli flakes
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
2 tablespoons oil or ghee
Salt to taste
Fresh coriander leaves, chopped or kosuri methi (for garnish)
Lemon wedges (optional)
*Method:*
1. *Cook the Rice:*
Rinse the basmati rice in water until the water runs clear. Soak it in water for about 20 minutes, then drain.
In a pot, bring 2 cups of water to a boil. Add the soaked rice and a pinch of salt. Cook until the rice is just done, then drain and set aside.
2. *Prepare the Beetroot Masala:*
Heat oil or ghee in a large pan over medium heat.
Add cumin seeds, cinnamon stick, cloves, cardamom pods, and bay leaf. Sauté until fragrant.
Add the chopped onion and green chili. Sauté until the onion turns golden brown.
Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add the grated beetroot and cook for about 5-7 minutes, stirring occasionally, until the beetroot softens.
3. *Spice It Up:*
-, red chili powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.
4. *Combine Rice and Beetroot Masala:*
Add the cooked rice to the beetroot mixture. Gently mix until the rice is well-coated with the beetroot masala. Be careful not to break the rice grains.
Cook for another 2-3 minutes on low heat, allowing the flavors to blend together.
5. *Serve:*
Garnish with freshly chopped coriander leaves.
Serve hot, with lemon wedges on the side if desired.
