I have to say this is by far my most favourite recipe for pork belly. Crispy on the outside, juicy and full of umami inside. The butter really bring the sauce to another level. WARNING! it is very rice consuming :)).
Recipe:
Pork belly - 800g
Garlic - 25g
Shallot - 25g
Ginger - 25g
Soy sauce - 20ml
Rice wine - 20ml
Sesame oil - 10ml
Chilli powder - optional
Ginger minced - 20g
Sauce:
Minced garlic & chillies
Sugar - 30g
Fish sauce - 30ml
Water - to adjust taste
Unsalted butter - 20g
