You need to learn to make jambalaya. It's the ultimate outdoor food. Growing up in south Louisiana, we used to make jambalaya in the woods in huge cast iron wash pots. The meat was squirrel, rabbit, wild birds, whatever they boys could rustle up. Best outdoor food ever.

@@BUSHCRAFTTOOLS Beware of any jambalaya that's red or any jambalaya recipe calling for tomato. True cajuns will never quit laughing at you. It's a cajun (rural) dish...not a creole (urban) dish. Take it from me, chèr, nobody in New Orleans knows how to make it. Jambalaya should be dirty brown. The secret is you have to nearly burn the onions, a/k/a you have to "blacken" them. That's what gives it the color and the smoky flavor. Gamey meats are best in my opinion. If you use deer, rabbit, dove, quail, and/or squirrel, you won't need andouille. Your fire pit is perfect for jambalaya.

Sorry Mate... my Korean wife has told me to reply... She said that you were using virgin sesame seeds in that recipe. Her advice is to cook your sesame seeds in a dry pan until well browned, then crush them into seed/powder. Makes all the difference. Dude... I'll have to agree with her. I've had to crush so many in my years for her... and I'll agree that it makes all the difference. Has a way of "exploding" the flavor. It is called a ridge vent and this is what I suggested on # 6 (I think). The next step (I know you guys don't like peeling bark, BUT) is to line the inside walls starting at head height and working down to the ground with bark. This creates a plenum that will draw air from the outside and up to and thru the ridge vent. This air flow will keep the Viking shelter free of smoke even if it is totally enclosed. The Native Americans have been doing this with their Teepees for thousands of years and there is no reason that the Norseman did not know this tech either.
