Flat Dipped Croissant Recipe (for two croissants):
1 tbsp salted butter
1.5 tbsp sugar
Strawberry White Chocolate Ganache:
3/4 cup white chocolate chips
1/4 cup heavy (35%) cream
1 tbsp Freeze dried strawberry powder
Mix together salted butter and sugar, set aside.
Microwave your croissant for 10 seconds. Using parchment paper and a rolling pin, flatten the croissant. It should be about 1/2 centimetre in thickness.
Spread the butter and sugar mixture on both sides. Fry on a non-stick pan for 3-4 minutes each side, on low heat. Make sure to place parchment paper and a heavy pot (filled with water) on top. The weight will press the croissant and keep it flat, helping it to crisp up as the sugar caramelises.
Once both sides are golden brown, place them on parchment paper and cook them in the fridge for 30 minutes to 1 hour. They will harden and crisp up as the sugar cools.
In the meantime, melt your chocolate and cream in the microwave for one minute. Mix until smooth and add freeze dried strawberry powder (or your preferred flavour & colour).
Spread half the ganache on the croissant (as much as you want) and place them on parchment paper and back in the fridge for the ganache to cool and firm up.
Try not to eat too many!
