Jamie Goode visits Champagne Bollinger for an annual event: the vins clairs tasting. This is the tasting of the base wine components from the previous vintage, which is 2021. They are then blended with reserve wines from previous years and are bottled with sugar and yeast, and left in the cellar for three years to make the next edition of Special Cuvée, which is Bollinger's famous non-vintage wine.
