I have done all these exercises with you today and yesterday so thanks a lot for sharing :) I wonder why scale degree 4 is considered an anchor tone? seems to me that the 3rd degree should be more important and stable in any key than the 4th degree. It is usually 1,3 and 5 that make the most stable tones in the key right?

Good point. I learned the concept of "anchor tones" from one of my graduate music theory teachers. When using these tones as doubling choices for first inversion major or minor triads, the chord should sound a bit better than it would have using another doubling choice. However, sometimes the anchor tone is not used in voice leading (voice leading takes precedent over voicing - the way the chord is spaced and the note doubled). So, think of "anchor tones" as more of a guideline and less of a rule. In other words, go with the best voice leading over a particular chord doubling for first inversion major and minor triads.

in both 6 chords in example 2 in A major at around 44 minutes into your video you double the wrong notes. You are doubling the B which is not an anchor tone of E major and you are doubling the C# which is the 3rd of the I6 chord. According to everything toy have taught here, these are the wrong doublings.

Excellent observation Arman. In these cases, voice leading takes precedence over the doubling. It is better to have smooth voice leading (and avoid leaps of a fourth or greater in the soprano, alto, or tenor) than to double the anchor tones. Use anchor tones when it makes good voice leading. Otherwise (if the anchor tone does not result is good voice leading), use a second or even third doubling choice to achieve smoother voice leading. By the way, many other voice leading methods would not even account for "anchor tones." This term is not even mentioned in the Tonal Harmony textbook.
