I am curious about why his head drawing circles so many times. Is that helpfue for breathing? Or it may sound different? (I am just learning recording and I thought this moving may influence the recording, but I dont feel this in the vedio. I also want to know the skill of this.)

Speaking from my few months into playing the oboe... Oboe is kinda sensitive to the point where one fraction of difference in embouchure and breath support leads to a sharper or flatter pitch, so breath control is a little tricky here. Raising/lowering the instrument at certain angles (which sort of looks like circling around the instrument) helps to some extent so that embouchure/breath support would take a more "consistent" effort to maintain across all the notes and not overcompensate to the point that the oboist would "bite" the reed/blow too much air (which is the most common mistake for beginner oboists), which may cause the reed to prematurely close/get water in the reed or in the holes during a performance (which either flattens/sharpens the pitch or worse, make the instrument unplayable). To answer your question, it helps in breathing in the sense that "biting" will no longer be an option, and it does help in making it sound different
