Steaming fish by wrapping in banana leaf is something that is quite commonly done in the oriental cuisine and is quite classic. I have made use of carp fish, you can make use of any fresh water fish as the marinate that I have used goes well with fish with delicate flavor.
A marinade of pounded onion, garlic, ginger and chilies is applied to the cut and cleaned fish and wrapped in layers of banana leaf and left to cook over a charcoal fire or a tawa at low flame.
The fish is succulent and juicy and is delcicate in taste.
