You don’t taste the vinegar, this has been the best way I have found to preserve potatoes. I also cut them into fries, my kids will air fry them up for lunch.

Also if you don’t want to use the vinegar , just water bath for 3 hours.

You can taste it a bit, if you don’t want to add the vinegar just water bath them for three hours instead of two.

Do jars have to be completely immersed?? Im going to try pints cause im single & 1/2 the vinegar in jars?

I read her answer to others. If you don’t add vinegar just boil 3 hours.

How much vinegar would i use if I can my potatoes in pint jars?

That’s a good question, I never done pint jars. If you used the full amount they would taste to vinegary. I would use half the amount , but don’t change the amount of time you water bath them. Stick with the two hours. If you choose to use no vinegar water bath 3 hours.

What kind of potatoes did you can? I have Reds and Yukons that I’d like to can but I’ve heard you can only can white potatoes.

I have canned russets and red, I find if I can them right from the garden when they are really new , they don't turn out as well but are still fine. I like them to be about a month or so old before I can them. Hope this helped!

I can’t see why not, I haven’t tried it myself, because we are not sweet potato people, but you could try and let me know. Maybe just try with one or two jars let them sit on the shelf for a while and see how they turn out.
