Agave nectar man! Makes a huge difference with agave spirits. (Speaking of which, this cocktail would be absolutely fire with mezcal, or combination of mezcal and tequila).

Chef Tom, I’m looking for a simple way to cook a duck. Something like a spatchcock recipe. Thanks for all your help.

Off subject - but the only thing keeping me from buying a Yoder is hearing that there’s just not enough smoke flavor.. this has me looking at lone star grillz. Can anyone comment on this? Thanks

If you want a little smoke, get any pellet grill. If you want more smoke get an offset smoker or use wood chunks on a kettle style charcoal grill.

You're going to encounter this with any pellet grill just due to the nature of pellets as fuel and because of how efficiently and cleanly pellet grills burn a fire. I was initially disappointed at how light the smoke flavor was when I got my YS640s about 2.5 years ago, but I just use a smoke tube with chips to supplement nowadays. It's an absolute beast when you use it for direct heat/open flame grilling in conjunction with the GrillGrates, and that's what I'm doing 90 percent of my cooks anyway. You can taste the wood fired smokiness on grilled foods, and it's more pronounced with leftovers the next day. You will get a stronger smoke flavor from a charcoal grill or smoker though.

@@ianosborne2500 yeah man I’ve been using a 22 kettle Weber for about 6 years, very difficult to control the temperature for long smokes. Ive been looking at reqtec and campchef which is more in my budget, i may have to wait and save up for this Yoder. Not sure

@@mattman8822 nice, I actually just got a 22" kettle a month ago to start learning the charcoal side of things! You know, the Camp Chef Woodwind Pro with the pull out wood chunk tray may be worth a look if you're interested in the smokier flavor profile on a pellet grill. I hope Yoder comes up with an accessory for the YS series that allows for some kind of wood chunk usage.

@@ianosborne2500 yes I saw that on the campchef, just worried about quality. Can’t have it all right? Are you leaving a pellet grill for the Weber?

I know you sell products but it kills me every time you use a mix of any type. I like what you’re making almost always but I never buy products. I only use individual ingredients. To me, opening jars and packages is not a recipe.
