You could try the Korean cheong method to get a lot of watermelon flavor. It's just mixing equal parts sugar and watermelon by weight and waiting a few days. Strain out the solids and you have a delicious syrup.

Looks yummy, and I'm surprised by the way the taste changes. Reminds of the time I made $2 worth of apple sauce using $4 worth of granny smith apples, and it only took me 3 hours.

just subscribed. Came here on your Sous Vide eggs video. I spent several years (off and on) getting watermelon syrup down. First, seedless watermelons were a quick no simply because the flavor of watermelon is more “watermelony” on seeded melons. The suck part is, you still have to remove the seeds because they have a stronger flavor than the actual watermelon. Toast em, they have a nutty taste and go great on a wilted romain salad with dried cranberries. Anyway, the next hurdle for me was chemistry. Syrup is 14% to 18% sugar and watermelon is about 6% and the flavor compounds are volatile. So, I had to reduce the liquid content by 2/3rds without killing the flavor. Even on the lowest settings my stove was too hot and the oven sauna was a no go because condensation dripped back into the pan. My best success was actually a double boiler stirring while binge watching Stranger Things. I did a cheat once adding sugar into blended juice to push the time back, but it weakened the flavor and my watermelon margaritas deserve to taste like watermelons. I appreciate you watching and subscribing! Regarding the melon syrup - I discussed the same difficulties we both had with a friend of mine who is much more knowledgeable with chemistry, especially food chemistry. He said it's super difficult not to trigger the mailard reaction with simple sugars. I think the ideal process would be to trigger evaporation (like, leaving out in the sun), but in a controlled environment and at a rapid rate, which... Would be super difficult without a chem lab (as far as I know, lol)

why not use the sugar dusting method. i think it must use capillary action to remove the juice. but I'm not sure if i could call it a syrup

Wow! Interesting, I’ve never heard of Watermelon Syrup before. I’m going to give it a try. Carbs??? Think I will try it in sparkling water just for a hint of flavor and sweetness. Hope I like it, I’ve never been fond of Papaya....tastes perfumey like Cilantro tastes like old dishwater smells. 😜

There's quite a bit of sugar in watermelon juice - by reducing it, we concentrate those sugars!

Tastes different too. I think I didnt get much of the pumpkin smell because I removed a lot of the pulp. Although, when I tasted the pulp that seperated as it simmered, that did have a flavor resemblance to pumpkin. The whole experience was weird - complete opposite of everything I expected lol

Growing up, my Yiddish Grandma always had candied watermelon rinds on her relish tray. Years later my late husbands grandmother taught me how to make them 😋

Unfortunately, I do not. Since it's basically a reduction, I would likely have to send it out to a food lab to have it analyzed and I don't have the funds for that :/

I'm not sure how long it will last in the fridge. Plain simple syrup can last me for a while, but this is a little bit more than just sugar water. My last batch was good for at least two months, but I'm not a food scientist, so I cant say for sure about its expiration date
