Freeze them separately then mix them, I think this happened because the cream foams when freeze drying

Since non-dairy creamer is already a powder, I have to assume you used real cream. Can you try real cream or half-and-half separately, mix them with the coffee as powders and then show the results?

What about pre-freezing it? I’ve had success pre-freezing milk for 24 hours before putting it into the freeze dryer. You might need to pre-freeze so the creamer in the coffee doesn’t react that way.

Pre freezing it was going to be the first thing we try! When we do our tomato powder if we pre freeze it first the sugars in the tomatoes doesn't expand nearly as much so I would hope this would be similar!

What kind of creamer did you use? Some creamers have so many gelling agents and emulsifiers... You probably need one that is just cream and flavoring.

What happened?! We freeze dry milk with no issues but it's not creamer....

I have no idea! Normal cold brew was above it and did fine, then the three trays of the mixed stuff went terribly. Next time I’ll use a different creamer and pre freeze first! We do milk all the time without any issues at all!

You need to freeze them separately. Then mix the powders after. Then you just add water to reconcentrate. The fun thing about this is. You can also add things like sugar, cocoa powder, or spices like cinnamon or nutmeg. Creating a large variety of flavors. I'd even suggest adding some pumpkin powder, and pie spices. To make a pumpkin spiced coffee mix. The options are endless. Peppermint and chocolate for a winter drink. Maybe even some freeze-dried marshmallows. You can go wild.

Haven't done coffee - yet, but have done lots of liquids. I have a version one and i increase the freeze time to 16-20 hours. Sounds ridiculous, but it has to be COMPLETELY frozen or you get a mess. I usually add a couple hours to the dry time too. So far,🤞, it's all come out! I don't use a tray liner, just have a no scratch spatula for removal.

These probably need to be frozen before putting in the freeze dryer. Like into ice cubes, or even a silicone ice cube tray that is freeze dryer safe?

You can freeze it, in baggies, in your freezer. Then, remove from baggies Anna place in freeze dryer trays and freeze dry!

I'd assume for coffee you'd make it for hiking/camping trips. Or other times you need convenience to make coffee away from a kitchen.

Might be a better idea to melt peppermint candy into black coffee and then freeze dry it. Not as smooth as creamer but still less bitter than black, and extra flavor
